How can we find beauty in the everyday, even in something considered "invasive"? This workshop, led by artist and chef Uno Fujisawa, will answer that question by transforming invasive Japanese knotweed into stunning ikebana arrangements, followed by some simple yet creative cooking ideas to repurpose your "bouquet" after the workshop.

What will you do 

Learn the art of ikebana and discover the hidden potential of knotweed. In this workshop you'll learn the core principles of this traditional Japanese flower arranging style. We'll then venture into the our aquaponics system (urban farm) to harvest herbs and other natural materials. After unleashing your creativity and crafting your own ikebana masterpiece, Uno will share some simple yet creative cooking ideas to repurpose your "bouquet." 

Japanese Knotweed Season 2024

Every spring, Mediamatic organises a season around Japanese knotweed. Knotweed is a fast-growing plant known in Europe for being considered invasive. What many do not know, however, is that this plant species has a host of positive properties. During this season we will explore how to live in harmony with this controversial plant.

Uno Fujisawa

Uno Fujisawa, born in Japan in 1982 and currently based in Amsterdam, is not only an artist but also a chef. Her artistic endeavours are rooted in a profound exploration of the seemingly simple act of eating, a ritual that is universally repeated every day. Having honed her culinary skills as a self-taught chef for over 15 years, Fujisawa further deepens her understanding of agriculture and nature at 'Landje van De Boer' in 2020, and continues to do so.

Her approach explores new possibilities for food, merging cooking and Japanese traditional culture, particularly Ikebana, into what she terms ‘Edible Ikebana’. Edible Ikebana is her daily practice and what she shares with people. Her simple practices try to touch profound qualities of life. They wish to reveal the meaning of 'the inner world of relationships' of nature and humans and the connections between them.
