Uno Fujisawa, born in Japan in 1982 and currently based in Amsterdam, is not only an artist but also a chef. Her artistic endeavours are rooted in a profound exploration of the seemingly simple act of eating, a ritual that is universally repeated every day.

Fujisawa is also interested in themes and activities related to soil, agriculture, food production, the tools we use in our daily life, and consumption cycles. In her work there is an intent on bringing nature, food, design and art into a whole, researching in what ways the ordinary can become extraordinary.

Having honed her culinary skills as a self-taught chef for over 15 years, Fujisawa further deepens her understanding of agriculture and nature at 'Landje van De Boer' in 2020, and continues to do so. 

Her approach explores new possibilities for food, merging cooking and Japanese traditional culture, particularly Ikebana, into what she terms ‘Edible Ikebana’. Edible Ikebana is her daily practice and what she shares with people. Her simple practices try to touch profound qualities of life. They wish to reveal the meaning of 'the inner world of relationships' of nature and humans and the connections between them.

She also worked alongside Takako Hamano to create the 2023 EatArt experience. Read more about it here. The themes of this project corresponded with Uno’s recent work, such as (re)connection, life’s natural cycle and the interconnectedness with our environment.

In 2023 she also developed the Freedom Meal together with Alaa Abu Asad and Aslı Hatipoğlu and they are currently working on the next Neo Futurist Dinner that will take place coming spring during our 2024 Japanese knotweed festival.
