Banana Curry
Ingredients:
- 2 teaspoons butter
- 1 small coarsely chopped onion
- ½ c. sliced mushrooms
- 1 diced chicken breast
- 1 c. chicken stock
- ½ c. coconut milk
- ¼ c. chopped dates
- 2 teaspoons curry powder
- 1 sliced overripe banana
Preperation:
- Sauté the onions and mushrooms in butter. Add the diced chicken, stock, coconut milk, dates, and curry.
- Turn heat to low, cover and simmer 15 minutes.
- Add sliced banana and simmer 5 minutes more.
The Banana Curry is best served on rice.
