He has the know-how and wisdom to create the seasonal dishes you can taste on Wednesdays until Fridays. Cooking mostly vegan dishes, he incorporates the herbs, vegetables and edible flowers of the Aquaponics system in his menu. Also other Mediamatic gastronomy explorations, like our Tempeh Ware and fungi projects, find a place on the plates he serves.
