presentation:

The Taste of Elder: Branches

15 Nov 2018

Blossom, berries, branches and Wood Ear. All these ingredients can be found on the Elder tree, also known as Sambucus Nigra. Together with Brouwerij Oedipus and artist Zeger Reyers we research terroir in beer and we brew four seasonal beers with local ingredients from this tree.

The Taste of the Elder

On this taste-and-test evening, we examine the branches of the Elder tree. An unusual ingredient in beer. What can you do with it? Zeger Reyers talks about his fascination with this ordinary shrub, Sander Nederveen discusses the ins and outs of brewing with the branches.

Zeger Reyers

Nature is the driving force for the artist Zeger Reyers. He has a fascination for nature that takes over our environment. The stories around the Elder, are centuries old and countless. In collaboration with the Oedipus brewery, Zeger captures the flavours and stories of the Elder in five different beers. Four times the taste of the season, resulting in the taste of the year in a cuvée.

Sander Nederveen

Sander Nederveen is brewmaster at Oedipus, a young Amsterdam brewery. Oedipus prefers to brew beer for everyone's personal taste and for every moment of the day. With a preference for tasteful, dry beers without much alcohol. For the Taste of Vlier, Sander allows us to taste his new test-batch of elder beer and talks about the brewing process. How do you use different herbs and plants in beer? How do you achieve which effects?
