This unique event is designed to explore the potential of using a juicer not only to help manage and eradicate Knotweed but also to transform it into a valuable resource for culinary and brewing endeavors. Throughout the workshop, you’ll discover how this pervasive plant can be turned and consumed as a juice showcasing its versatility and unexpected benefits.

Henriette and Sander will guide you through the process of juicing Japanese Knotweed, explaining each step from the selection and preparation of the plant to the actual juicing techniques. You’ll learn about the nutritional properties of Knotweed and how these can be harnessed in beverage forms.

Japanese Knotweed Season 2024

Every spring, Mediamatic organises a season around Japanese knotweed. Knotweed is a fast-growing plant known in Europe for being considered invasive. What many do not know, however, is that this plant species has a host of positive properties. During this season we will explore how to live in harmony with this controversial plant.

Henriette Waal

Henriette Waal, a dynamic and visionary artist, designer, and brewer, graduated from the esteemed Design Academy Eindhoven, specializing in 'Man and Public Space.' Her educational background has deeply informed her artistic practice, which focuses primarily on the interplay between people and their environments.

Waal's creative work extends into fermentation, a process that characterizes her approach to brewing. Her expertise in fermentation is showcased in her role as a Beer-curator at Mediamatic's Bierberaad, where she explores the cultural and social dimensions of beer making. Waal's work is a provocative blend of art and science, questioning and reshaping the boundaries of how art is perceived and engaged with in public spaces. 

Sander Nederveen

Sander Nederveen serves as the brewmaster at Oedipus, an innovative brewery based in Amsterdam. At Oedipus, the brewing philosophy is centered on crafting beers tailored to individual tastes and suitable for different times of the day. The brewery specializes in creating flavorful, dry beers that are low in alcohol content.

Inspired by a trip to a beer festival in Copenhagen, Sander and his friends were motivated to start their own brewing adventures. They have since developed a lineup of uniquely named beers such as Mannenliefde, Dodo, and Salty Dick, which clearly set them apart from more traditional brewers. Oedipus is known for its creative approach to brewing, incorporating a diverse array of ingredients that truly make their beers distinctive and popular among those looking to explore beyond conventional flavors.
