If you want to bring your own hardware to install on: anything starting from pentium1 with 64mb of RAM will do. Some monitors will be available to hook up to, and don't worry, it's Really Easy.
In case you've already done your homework and want to know more: the flavors to be installed are Debian or Ubuntu, and more things that will be taught are basic linux operations.
